Homemade Chickpea Patties, a recipe by yours truly.

Ingredients:

2 cans of chickpeas
2 eggs
2 cloves of garlic or 1 tsp minced garlic
0.5-0.75 tsp salt
0.25-0.5 tsp pepper
0.5 tsp cumin
0.5 tsp rosemary
0.5 tsp dried parsley
2 tsp cocoa powder
fresh chives
1 small onion
1.5 cups bread crumbs (for those who have seeds allergies, I use Panko, it’s super safe)

1. Mash chickpeas into a pulp. I use a food processor. I like to add in the garlic and egg at this point.

2. Using a large mixing bowl, toss in the pulverized chickpea, egg, and garlic mixture. Add seasonings.

3. Chop up onion and brown in a frying pan. Add to mixing bowl.

4. Stir in bread crumbs. If it seems a little dry, drizzle in some olive oil.

5. Preheat oven to 350 degrees Fahrenheit.

6. Using a quarter measuring cup, scoop out chickpea mixture and form into patties. There is enough to make a dozen. Place on cookie sheet.

7. Drizzle olive oil over the patties. Bake for 20 minutes. Flip the patties, drizzle with more oil, and bake for 20 more minutes.

Notes: I pair these patties with a nice tzaziki sauce and some romaine lettuce. The above picture is my lunch from today aka leftovers (pretty much the best leftovers ever, and that includes leftover Chinese takeout).
